
The following is my parents’ recipe for a coating mix for baking chicken. In our kitchen, we tripled this recipe!
You could make a larger quantity and store in an airtight container in the fridge for a quick and delicious meat dish! It never lasted that long at our house! 🙂
Grind or finely crush ¼ lb. (one tube) of crackers. (Use saltine or Ritz type)
Add 1 tsp. garlic salt
1 Tbsp. chili powder
1 tsp. onion salt
1 tsp. poultry seasoning
¼ cup brown sugar
¼ tsp. oregano
Mix together in large covered bowl. Coat chicken with the mixture thoroughly. Place in baking pan. Bake at 400 for about an hour; lower temperature to 300. Cover with foil and cook 1 hour longer or until tender.
Now eat!
